The addition of Lactobacillus creates beautiful, balanced acidity and Brettanomyces contributes classic layers of barnyard funk. We added apricot to this for additional fruity layers to play off the tartness, barrel aged it for a year, and bottle conditioned it for 6 months for some zippy carbonation. It’s like Spring in a bottle.
